Southwest Quinoa Stuffed Bell Peppers


  • 1 cup quinoa, cooked
  • 4 bell peppers, halved and seeds removed
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cooked quinoa, black beans, corn, tomatoes, cheese, cumin, chili powder, salt, and pepper.
  3. Stuff each bell pepper half with the quinoa mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30 minutes, then uncover and bake for an additional 15 minutes until the peppers are tender.
  6. Garnish with fresh cilantro and serve hot.
